I had such an abundance of crystal apple cucumbers and had to get creative with a way to use them up. This relish is actually really delicious and such a great way to use up produce that otherwise may have gone to waste.

Cucumber Relish ***?***

Cucumber Relish ?

Ingredients
• 5 - 10 cucumbers, grated
• 4 onions, peeled and grated
• 1 ½ cups honey
• ½ cup flour (I used cassava)
• 1 tsp ground tumeric
• 1 tsp ground ginger
• 1 tsp ground pepper
• 2 tbsp sea salt
• 3 cups vinegar
• 1 cup filtered water

Method
1. Place grated cucumbers and onions in a large bowl and sprinkle with salt. Cover tightly and leave at room temperature overnight.
2. Use a cheesecloth to squeeze as much water out of the vegetables as possible. Set aside.
3. In a large bowl, combine honey, flour, tumeric, ginger and pepper. Set aside.
4. Over medium heat, warm up vinegar and water in a medium sized pot. Mix in the honey mixture until smooth, then add the cucumber mixture. Bring to a boil and cook until the relish is at the desired consistency. Stir frequently.
5. Sterilise jars and lids in boiling water. Once sterile, fill the jars with the relish. Poke out any bubbles with a knife or similar. Wipe the rims of your jars and place the lids and rings on.
6. Place the jars in a large, boiling water bath canner with a rack in place. Ensure that there is 1-2 inches of boiling water covering the jars at all times while canning. With the water at a proper boil, place the lid on the canner and leave to process for 10 minutes.
7. Remove jars from the canner and place on a tea towel lined surface. Leave untouched for 24hrs. Check the jars are sealed and then store in a cool, dark spot.

Calendula Salve ***?***

Calendula Salve ?

Ingredients:
• 1 cup calendula infused oil
• 4 tbsp beeswax

Method:
1. Combine the calendula oil and beeswax together in a double boiler.
2. Once the wax if completely melted, transfer to mixture to your container of choice and let cool.

Great for almost any skin issue, this salve is super quick and easy to make. If you grow calendula, this is the perfect use for it.  The calendula oil is made by steeping calendula flowers in oil for around 2 months.

Sourdough Tortillas ***?***

Sourdough Tortillas ?

Ingredients:
• 210g flour
• 100g water
• 100g sourdough starter
• 60g butter
• 5g salt

Method:
• Whisk flour and salt together in a bowl. (I use wholemeal spelt for these)
• add the butter and mix until well combined.
• combine with water and sourdough starter.
• Knead until mixed.
• cut the dough into 12 even pieces, and roll each piece into a ball. Cover with a tea towel and let rest for up to 2hrs.
• heat up your skillet on high.
• roll out each ball into circles, as thinly as possible.
• lay one tortilla at a time into the skillet. Cook until it puffs and then flip. Each side cooks for about 30 seconds.

Stop buying 'science experiment' tortillas from the grocery store. This homemade option is so simple, and will save you your money and your health.
